Homemade Peach Ice Cream

You scream, I scream, we all scream for ice cream!!

Nothing says summer like homemade ice cream, don't you think?

Last Thursday, Wayne stopped on his route at the Oak Grove Farmer's Market and came home baring fresh squash, tomatoes and peaches.  I knew the tomatoes would be going with BLTs this week, but I wasn't sure what to do with the peaches.  We had peach cobbler the weekend before for Father's Day, so I wasn't in the mood for another one.  Wayne suggested we make peach ice cream!  So Sunday afternoon, we invited my parents over and that's what we did!  Wayne even googled the recipe himself and found the one he wanted to make from allrecipes.com {I love this site, by the way!  I've used it for a few years and I like it because you can personalize your own recipe box!  Does anyone else use it?}

Homemade Peach Ice Cream
6 eggs, beaten
3 1/2 cups of sugar
10 fresh peaches, chopped
4 cups of heavy cream
2 cups of half and half
2 tsp. of vanilla
3/4 tsp. of salt

Directions

  1. In large bowl, mix together eggs and sugar until smooth; puree peaches in blender or food processor and stir 5 cups of puree into egg mixture. Stir in cream, half-and-half, vanilla and salt and mix well.
  2. Pour mixture into freezer canister of ice cream maker and freeze according to manufacturer's instructions.
Easy, peasy!  And SO YUMMY!!

Monday Meal Plan ~ October 28th

Happy Halloween!!

Y'all!

I had the BEST cooking week last week!  THE BEST!

Every single new recipe I tried is now a Horton Family Favorite {HFF}!!  Yes, all of them!



They were DELISH!  They were HEARTY!  They were "Mama, I really like this!" kind of meals!  They all made my heart smile because my family was happy.  
I was happy.

That's all that really matters, right?

So let me just tell you a little bit about them.  Easy Pepper Steak {Click on link below for recipe}.  I've been wanting to try this recipe for a while and when I showed it to Mr. Horton, he agreed, but thought we should use venison instead of beef.  Alrighty, then.  And guess what?  HE MADE IT HIMSELF!!  It was so nice to come home Monday night to a hot meal prepared by the Hubs!  It was so, so good.  Definitely on the list to make again.  Spaghetti Boats.  Y'all!  This will rock your world!! I know you don't think so because you probably eat your spaghetti and garlic bread separately {like I do!  Or did!}, but I promise you!  Hint:  By the five cheese garlic bread in the frozen section of your grocery store and use leftover spaghetti.  So easy-peasy!  And lastly, the Disney Potato Soup.  This was the only thing Mr. Horton wouldn't try because y'all know how he feels about soup.  Disney or no Disney. I think I may have gotten it a tad too thick, but at 7:30 at night, Alise and I were starving and we didn't care!  We both took leftovers the next day!

Menu Plan Monday ~ September 30

I had to buy a new crock pot last week!
Call it Pinterest Fail.  Whatever it was, it charred the heck out of my crockpot!

For what it's worth, I would not recommend making this pin.
And I was sooo looking forward to waking up on a Saturday morning to French Toast.  Maybe it was just me.  Prove me wrong.

So after the charring incident, I ran out and bought a new crock pot because I knew I would be needing one for the new soup recipe I had planned to try.

Have you seen all the latest designs for freakin' crock pots?

They come in just about every color imaginable and every design, too!  I ended up buying the black and white damask and it was all I could do not to buy the gray and white chevron design, too!!

Ya see?  Crockpots and I have a love/hate relationship.

Whoever gave Mr. Horton and I a crock pot for a wedding present nineteen years ago, I want you to know that that was the best darn crock pot in the world!  It cooked at the temperature it was suppose to cook!!

Fast forward a few years and for some stupid reason or other, I bought a new one and decided to go chef geek because I chose a "digital" crock pot. Fancy shmancy.  The thing never cooked at the right temp!!  No matter what hour increment you had the thing set at, it would cook on HIGH.  VERY HIGH! Everything I ever made in that pot burned up!!  I wanted to throw the bi-polar thing in the trash, but then there's something you need to understand about Mr. Horton!  He's one of these, save-it-you-may-need-it-one-day.  A bi-polar crockpot??? {It was the white one in the picture if you must know.}

So then I bought the stainless steel one - because I was in the "all-my-appliances-are-stainless-steel-so-all-my-kitchen-accessories-have-to-be-stainless-steel" mode and THAT's the one that charred French Toast!!  For what it's worth, the new damask pot I bought worked PERFECTLY for the soup I made last week!

And speaking of soup...the Tomato Basil Parmesan Soup was really good.  A 4.0 out of 5.  But something was just missing and I'm determined to play around with the recipe until I find out what it is!

But here is the best news of all: Mr. Horton tried it and LIKED IT!!  {Can you hear me shouting, "He likes it!  He likes it!"??  Ha!}  Now, it didn't rate with the Taco Soup he loves so well, but I was so proud of him for trying it and he agreed that it was missing something as well.  So not an HFF yet, but it could very well be a promising recipe!

By the way, I won't comment on how much of that chocolate cake I ate last week!

I kept the menu simple this week and full of family favorites.  Notice Mr. Horton's Taco Soup and Alise requested chicken and dumplings {he'll be eating leftover soup that night}.

And here's  what I spent minus a few non-food items. The weekly total was a little over $100.

Horton Family Favorites

My friend, Faith, has been designing my blog for a while now and I got her to design some new tags for me to use in my Meal Plan Monday posts!  Sooo stinking excited to use my new tags!!

One of the tags she designed is "Horton Family Favorites" and here it is:

I plan to use this tag in my meal plan posts to designate a new recipe that I've tried and LOVED!! Not just an ordinary recipe that was oh-hum, but one that REALLY KNOCKED OUR SOCKS OFF and one that we could eat again and again!!  When you see the "Horton Seal of Approval,"  you'll know it will be worth it to prepare for your own family and friends!

And what better way to start using my new "HFF" tag than to go ahead and introduce you to some of our family favorites that I've posted in the past?!

Here goes.

1.  Crockpot General TSO's Chicken.  I fell in love with this recipe the first time I saw it on Pinterest!  It was LOVE AT FIRST SIGHT!  But I was very skeptical about making Chinese food because I thought it would require lots of unusual ingredients.  Until I read the list!  Y'all, all these things are in your pantry already!!  Except for me.  I had to buy the honey, but still!!  TRY THIS RECIPE!!  You will not be disappointed!

2.  Miranda Lambert's Mom's Meatloaf.  My dad hated meatloaf growing up, so my mom didn't make it that much.  Mr. Horton and I have been married for nearly 19 years and I bet I've made meatloaf once.  Until now.  I made this a few weeks ago and forgot to mention just how unbelievable it is!  The ketchup sauce and sausage really make this meatloaf!  So even if you're not a fan of ML, you still need to try this recipe {I halfed the recipe and it was plenty for us}. Super duper delish!

3.  Marinated Grilled Shrimp.  Perfect for summer!  Need I say more?

4.  My Absolute Favorite Chocolate Cake.  I found this recipe several years ago in a Better Homes & Gardens magazine and my life has never been the same.  Not for this chocolate lover!  Don't let all the steps fool you.  The cake is amazing and I may or may have not made the cake and simply substituted canned chocolate frosting instead of the real thing {But don't tell my brother and SIL that!} a time or two.

5.  Blueberry Sour Cream Coffee Cake.  This recipe is GREAT for brunches, office breakfasts, teacher lounges, neighbor happies, and the list goes on.  How do I know?  Because I've made it on all these occasions and got rave reviews.  Simple and perfect.

So there you have it!  FIVE new recipes to add to your recipe repertoire.
