Happy National Ice Cream Sandwich Day!

Happy National Ice Cream Sandwich Day, Friends! Could this national day not fall on a better day of the week than Friday? I mean, really! I love Fridays and national food days, especially when it's something that I really love to eat and let's just say that this Mama has been enjoying her fair share of ice cream this summer! I can't seem to say, "No!" to Dairy Queen's mini M&M blizzards. They are SO good! 

In celebration of today's yumminess, I'm sharing TWO options for making these treats for your family this weekend. I've told you before that my family and Alise's friends can't get enough of them! Recently, we had a teenager swim party and these babies were GONE in five minutes flat! 
Here are my two FAST options for these crowd pleasing treats!

Option 1 || Use ready-to-bake frozen cookie dough and bake cookies as directed.  My family prefers Pillsbury Big Cookie frozen cookie dough for that quick cookie craving and I like them because all you have to do is place them on a cookie sheet. The bigger the cookie, the better the sandwich. Allow your favorite flavor of ice cream to thaw about 5-7 minutes on the counter so it's easier to spread between the cooled cookies. Next, roll the cookies in sprinkles for a more festive sandwich. Wrap in Saran Wrap and freeze until time to enjoy them. 

Option 2 || I can't believe this option hit me just the other day when I saw pre-made cookies in the bakery section of Walmart! So you guessed it! Buy the big pre-made cookies. No baking necessary. Layer your favorite ice cream between them and then roll in sprinkles if you like. Wrap them in Saran Wrap and enjoy later. I think this is my new favorite way to make ice cream sandwiches!
