Our Favorite Apps By the Pool

We're in Alabama today celebrating my dear husband's FIFTIETH birthday! I seriously cannot believe I have a fifty year old husband! It just doesn't seem possible! I'm the girl that still thinks 1991 was ten years ago! Ha! But after his heart attack last summer, I feel very blessed to be able to celebrate this special day with him and I pray that he has many, many more birthdays to come. 

When I asked Wayne how he wanted to celebrate his BIG day, he said he wanted to go "home," to Alabama and celebrate the day with his aunts, uncles, and cousins. Of course, I was all for throwing him a HUGE birthday bash, but he wouldn't have it and preferred something quieter with less pomp and bling and so that's why we're in Alabama. However, I'm still gonna get my "hugeness" in later today when we have a (HUGE!) fish fry with ALL the trimmings, complete with a red velvet birthday cake from the popular Edgar's Bakery! I'm also whipping up some of his favorite apps. Which, in case you're wondering, was the inspo for today's post.  
Charcuterie Board || To me, these things are so personal. Because really, it's whatever you and your family and friends like is what you tend to throw on them. I guess I shouldn't be so flippant since charcuterie boards have become a work of art for many hostesses. A while back, I posted a picture of our charcuterie board which included cauliflower and I got blasted for it. I was told nobody puts cauliflower on a charcuterie board. I'm telling you that you can put whatever your heart desires on your charcuterie board. The sky's the limit! Some of our favorites are a variety of cheeses, meats, fruits, and nuts. And have you noticed the shift from charcuterie boards to full blown grazing boards?

Skinny Pool Dip || This is absolutely our favorite summer dip. It's so easy to throw together and so addictive to eat! It doesn't have alot of ingredients, so I tend to keep them on hand for that last minute pool party. Two things to mention though. One, don't refrigerate the dip for very long. If the cream cheese refrigerates again too long, it's hard to dip with chips. Second, I would use only three-fourths of the Ranch seasoning and add more to taste. I recently made it and for the first time ever, it was too salty for us and I had to end up throwing out the leftovers. 

Loaded Tater Tots || Ok so this dish will require heating up the oven, which if you're like me, you don't like to do so much during the summer. Trust me. This recipe rekindled my love for tater tots and is so worth it! You can put them on skewers to be fancy, but I sometimes just make a single serving of tater tots in an 8 x 8 baking dish and everyone just helps themselves. Serve with a side of Ranch dressing or ketchup. 

Strawberry Brownie Kabobs || These kabobs are the perfect sweet treat by the pool and the kids love them! I've made them so many ways, either with angel food cake or pound cake instead of the brownies (sometimes I use store bought brownie bites in the bakery section). Our favorite way is to drizzle white chocolate over them. They are perfect for the Christmas holidays, too. 

Cajun Caviar Dip || You've heard me talk about this dip all summer and so I won't go into talking about all it's goodness. Suffice is to say that you just need to make it.  I can't wait for our Alabama cousins to get a taste of this later today! Dying to hear what they think!

    And, seriously you got blasted for putting cauliflower on your charcuterie board? What the heck???
    I am pinning this post because all of these apps look so good. You know how much we LOVE that Cajun Caviar!
    I think Wayne had the right idea about going home to AL and celebrating with family. Your menu sounds marvelous! I love fried fish and red velvet cake - YES PLEASE!!

  4. I wish I could be at that Birthday Fish Fry with you all. When I think of apps, I think of you as one of the queens of them. All sound perfect and yummy. Keep on celebrating that sweet Birthday BOY! Mr. Nines will be in 11 short months and I have no idea what to do? Love you!

  10. Oh, my, these sound awesome but,for some reason, I never make appetizers. I love to eat them though. Maybe I should change things and start making these. I always think that if folks eat an appetizer they will eat less of the "real" food I fix. Happiest of birthdays to Wayne! Oh, to be 50 again. Good to catch up with you!

  12. I just laughed that someone thought they had the rule book on charcuterie boards and were to enforce them. Lol. I put together a charcuterie board from Aldi finds (thanks to a visiting friend) and it turned out great! I love the idea of those strawberry brownies. My boys would love them!

  13. We had a charcuterie board Friday night when we went out to eat! And I'm an Alabama girl and I LOVE Edgar's!!! The strawberry cake is my absolute favorite, so each time we go, I grab a slice!!!

  15. Curious about the pepper jelly for the caviar dip. Love all the other ingredients just not sure what it is. And where to get it! Sounds like a real winner. Pinned and will be on the look out for pepper jelly.
