What's Hap-"Pinning" - Girl's Night In

For the last few months, some of my close, school-mom friends and I have been having a Girls Night Out.  In May, right after school was out, we dined at Cotton, a local fancy-shmancy restaurant owned by Chef Bahr, who won the Food Network show, Chopped, a few years ago.



In June, shortly after I fractured my foot, I called Jennifer and said, "Plan a GNO.  Like NOW!"  We went to another local favorite, The Warehouse, and sipped wine on the back deck overlooking the river.


Due to vacations and other summer plans, we didn't get together in July, so a few weeks ago, I texted everyone and told them that we needed to get together before the new school year was in full swing and that we'd just do it at my house. My first thoughts were, "Okay...now what am I going to cook and serve?" 

After I thought about it for like, five seconds, I got the fabulous idea to have a Mexican themed GNO with appetizers. I had a fabulous mind set: Keep it simple, stupid!  Thus the appetizer menu.  And here are some ideas I pinned for our upcoming Mexican Fiesta later this week!

No one - absolutely NO ONE! - comes to my house anymore without trying and falling in love with this dip!  I know I pinned it last week, but that's because it's THAT great!  Although Mexican and bacon aren't normally used in the same sentence, this recipe as jalapenos in it, so that's Mexican enough for me!  Can't wait for these girlies to try this!!


Bacon Corn Dip - This dip is unbelievably creamy and addicting. It's so good, you'll want to just skip the chips and eat this with a spoon!
Mexican Dip or Seven Layer Dip is always popular at parties.  I've served it before in a 9 x 13 dish for bigger parties and individually in small plastic tumblers for a couples' shower, which turned out really nice. I love the idea of serving this dip in margarita glasses! So cute and festive!

 7-Layer Mexican Dip Recipe ~ Layer after layer of deliciousness, piled high. Appetizer/ tailgating   Cute little idea! 7 layer dip appetizer for guests. So everybody isn't huddled around one spot! I could also put my taco dip in this...I likey  Refried beans, guacamole, zesty tomatoes, cheese, onions and sour cream layered and served in individual stemmed glasses

Normally when I have a Mexican Fiesta, I go all out with a taco bar, but this time, since there are only four of us, I decided I might try these mini tacos wrapped in won-tons. I make another recipe using won-ton wrappers and they're always a hit at parties, so surely this recipe will be fun, too. I make mean tortillas rollups, too!  The thing I like about them is that you can make them ahead of time and even freeze them.

                    These fun Crunchy Taco Cups are made in a muffin tin with wonton wrappers!  Great for a taco party/bar. Everyone can add their own ingredients and toppings! Crunchy, delicious, and fun to eat!   Fiesta Pinwheels. This is one of those recipes where I would use fat free or low fat versions of the cream cheese and sour cream.

I'm not a shrimp fan {Gasp!  I know!}, but the Mexican Shrimp Cocktails looked so good! They're different and the girls would love them!

No pins needed for my plans for dessert!  Chocolate cake for the grand finale!

And if you're wondering where's the margaritas, I've got you covered! The best of the best comes from a local dive, so I'll be "driving thru" a few hours before the party for "Green Grown Up Icees"!

  12. Yummo. We had a chips and salsa bar for Katie's grad party and it was a huge hit. Everyone especially loved the mango and the pineapple salsa.
