Low Fat King Ranch Chicken

1 pound light Vleveeta cheese, cubed
1 (10 oz.) can Rotel diced tomatoes and green chilies
2 large chicken breasts, cooked, or 2 (10 oz.) cans chunk white chicken, shredded
1 (10 3/4 oz.) can reduced fat cream of mushroom soup
1 can reduced fat cream of chicken soup
1 bag Reduced Fat Doritos chips (I used the baked Doritos)

Melt Velveeta in microwave with Rotel; set aside. Preheat oven to 350 degrees. Spray 9 X 13-inch casserole dish with nonstick cooking spray. In separate bowl, mix cooked chicken and soups set aside. Line casserole dish with layer of chips; add chicken mixture. Pour Rotel over chicken and continue layering ingredients, finishing with cheese as top layer. Bake at 350 for 30 minutes.

  1. Okay, thanks for this!! I'm lacking in the low fat/healthy/weight watchers recipes for dinner. Breakfast and lunch I'm covered, but need more low fat dinner ideas!! Yummy!
